banana smash cake

Although I am by no means a crazy health nut (exhibit 1, 2, 3 and 4) we wanted to give Porter a cake that would be somewhat good for him and that wouldn't turn him into the Tasmanian devil for the remainder of the day. Although I am sure he would have loved a double chocolate brownie cake with chocolate frosting (maybe next year, P) he also loved his unsweetened banana cake with cream cheese frosting, which was still a treat for him. Plus he took a two hour afternoon nap after the party and slept 13 hours solid that night. No sugar rush for this kiddo and that makes this mama happy.

This banana smash cake is all over pinterest but we changed a couple of things along the way.
Here is the recipe we used: 


Cake: (makes two small cakes)

5 ripe bananas
1 cup unsweetened applesauce
1 1/2 cups whole wheat flour
1 teaspoon baking soda
3 teaspoons vanilla extract
1 teaspoon cinnamon
1/4 teaspoon nutmeg

Frosting:

1 cup (8 ounces) cream cheese
1/2 cup unsweetened apple juice concentrate
2 teaspoons vanilla extract

Directions: Mash bananas in a bowl. In a separate bowl mix flour, baking soda, cinnamon and nutmeg. Add the mashed bananas, applesauce and vanilla to the flour mixture. Grease two 8 or 9 inch round baking pans and spread batter into pans. Bake at 400 degrees for approximately 20 minutes. For the frosting, simply soften the cream cheese and whisk in the apple juice concentrate and vanilla until creamy. Easy peasy! Well, at least Dan said so. :)
The cream cheese frosting was a bit tart.
The shirt got a bath.
And so did the birthday boy.
